Chocolate Truffles
Ingredients:
25g Cocoa Powder
50g Icing Sugar
50g Chopped nuts (any will do)
50g Soft Cheese
extra Cocoa Powder for dusting
1) Put the cheese, chopped nuts, icing sugar and cocoa powder in a bowl and mix well.
2) Now roll into marble sized balls.
3) sprinkle a plate with cocoa powder and roll the balls so the are coated
and then you are done!

Almond Victoria Sponge Cake
The Victoria Sponge Cake was named
after Queen Victoria, it is often referred to
as a sponge cake.
A traditional Victoria sponge cake
consist of a filling of raspberry jam and
whipped double cream, also a traditional
Victoria sponge cake is not iced or decorated.
This cake is sort of a mesh between a Bake-well Tart and a Victoria Sponge Cake

200g | Self Raising Flour |
200g | Caster Sugar |
200g | Unsalted Butter |
4 | Eggs |
1tsp | Baking Powder |
1tsp | Almond Extract |
Filling + Decoration | |
Raspberry Jam | |
150g | Unsalted Butter |
280g | Icing Sugar |
1tsp | Almond extract |
Amaretto liquer to taste. | |
Flaked Almonds to decorate |
Method
- Cream together the Butter and the caster sugar together and add the Almond Extract until light, Fluffy and creamy.
- Whisk the eggs and add them slowly to to the butter and sugar. (if it starts to curdle then add a spoonful of flour to the mixture.
- Sift the flour and baking flour into the mixture and stir.
- Divide the mixture into the two tins and place into the centre of the oven
- when the cake is cooked take out and leave to cool down.
- Cream together the icing sugar, butter, Almond extract and liqueur.
- Add a layer of jam onto one of the cakes and then add the Creamed Butter and sugar mixture. The cream can be piped or applied with a palette knife.
- Put the other cake layer on top of the the cream and jam layer.
- Finish by sprinkling flaked almonds on top and then sift some icing sugar on top of it.
Chocolate CakeFor a chocolate sponge instead of having200g of flour use 180g of Flour and30g of cocoa powder and for the fillingOmit the Jam and use 250g with 30g ofCocoa powder.

My love of baking cakes started at school, where I decided to do my whole GCSE project on cakes. After school my love of cakes continued where every year my family have a big get together in summer and It has become a tradition to make bigger and more exciting cakes! (I sound like a fat person) Last year my younger brother and I made a replica of the, Wii Mario Kart, Mushroom Gorge Track. It took a long time to make, but was so worth it. The year before that we made a mountain scene.
